The Intercontinental Sydney is taking a Masterchef approach to breakouts during meetings and events held at the hotel.

The Insider Breaks range aims to connect time-poor delegates to their destination and the latest concept involves desserts that are influenced by the Sydney region.

Treats include Malfroy’s honey tart which uses honey sourced from sustainable hives in NSW’s Central Highlands and Blue Mountains. The honey is award-winning and extracted from natural virgin comb. Upping the sweetness quotient is the macadamia caramel slice which uses local organic macadamias.

For delegates who want to make their cake and eat it too, the macaron making workshop is ideal. The chef prepares the macaron shells – arguably the hardest part of the biscuit to perfect – and delegates have the job of sandwiching the dessert with a cream filling. The raspberry and rosewater macarons are also filled with a fresh raspberry. Mouth-watering treats such as cranberry rocky road, lamingtons and clotted cream scones are also available.

Insider Breaks also incorporates interactive experiences such as yum cha in Sydney’s Chinatown, pea-topped pies from Harry’s Café de Wheels and live shucked oysters at Sydney’s Fish Markets. The Insider Breaks packages are available for events held in the hotel’s 15 venue spaces that include views over Sydney’s Botanic Gardens.
