The Big Cheese with Carl Forrest

Carl Forrest has led an interesting and inspiring career in the hospitality industry, both around Australia and New Zealand, and has now been appointed the position of general manager of the Royal Mail Hotel, Dunkeld.

The great thing about my job is… managing and driving a destination product is tough but Dunkeld steeped in Australian pastoral history is an amazing place. I am blessed with an amazing team who I love inspiring.

The challenge for industry is… in the changing face of hotel technology it is utmost we must never lose the authentic and personable touch with our guests.

My greatest achievement is… selling a bottle of Chateau Mouton Rothschild 1945 for $12,000.

The biggest thing in MICE this year will be… Hispter culture influencing the way we formulate and develop events to be effortlessly cool.

I try to relax by… walking up Mt Sturgeon or Mt Abrupt in the Grampians. The peace and majesty of this mountain range is a must for everyone to experience.

I don’t understand why… people hide behind their keyboards and send an email then call you to “did you get my email”.

My favourite venue is… the Royal Mail Hotels Homestead and Woolshed at Mt Sturgeon. Iconic and stunning at the foot of the Grampians.

I’ve always wanted to travel to… Maldives with its clear water, white sand and I hear the fishing is amazing.

I am scared to death of… of the Wallaby who lives in my front yard. When I come home late from work he leaps out in front of me and my heart stops with fright.

I can’t live without… yum cha. It’s a cult classic for me and I will drive three hours to get it.

I really wish I had… the hotels wine cellar which is currently valued at $2.6 million.

If I could invite four people to a dinner party, they’d be… my Mum, my Grandmother and my Nana who have all passed away. I would love to thank them again for all they have given me.

For anyone starting out in the industry one piece of advice I’d give would be…. Work hard, be patient and humble and find a good mentor who can guide you through the development of your career.
